BANANA OAT PANCAKES
My daughter is turning 2 in September and has always been an easy eater (very lucky). At the moment there isn’t anything (other than noodles) that she does not like. Loves her some spaghetti and every form of pasta but any type of Asian noodles just makes her shiver, so still working on that. Her favorite breakfast is definitely these banana oat pancakes, which is great for me as they are healthy and easy to make.
This recipe makes about 12 small pancakes.
2 very ripe bananas, mashed
1/2 cup oats
Your favorite toppings
Mix all the ingredients together and melt a tablespoon of butter over medium heat. Using a spoon, add dollops of the mixture to the pan and fry each side for a couple of minutes. They should be a bit browned. Enjoy with your favorite toppings!
