GREEK YOGURT BANANA BREAD
I jumped on the banana bread wagon, just couldn’t resist after seeing so many delicious pictures on Instagram. I have been playing with different consistencies to get the perfect moist banana bread and I think I found it. It’s delicious and even better with some cream cheese and extra honey. Anyone else a fan of cream cheese on a slice of banana bread? Or am I the only one?
This recipe makes 1 loaf.
3 ripe bananas, mashed
2 cups all-purpose flour
2 teaspoon baking powder
1/2 cup full fat Greek yogurt
1/4 cup honey and 1/2 cup maple syrup
2 eggs, whisked
120g unsalted butter, room temperature
Pinch of salt
Preheat the oven to 180C and grease a 23cm loaf pan.
In a bowl of a stand mixer beat together the butter, honey and maple syrup until creamy. Whisk in the eggs, bananas and yogurt until smooth. Now add the flour, baking powder, salt, and mix gently; you do not want to overmix.
Pour the mixture in the loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the middle comes out clean.
Remove the banana bread from the oven and allow to cool in the pan before transferring to a cooling rack. Enjoy!
