This goat cheese and spinach quesadilla will take you about 15 minutes to make! Make it for yourself or your entire family, everyone will love it! Don’t have a goat cheese lover in the house then substitute it for grated mozzarella or cheddar.
This recipe makes 1 quesadilla.
2 flour tortillas
200g fresh spinach
1/2 cup soft goat cheese
1 small garlic clove, minced
1 shallot, finely chopped
1 tablespoon olive oil
1/2 teaspoon ground paprika
Splash of lemon juice
- In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook for a few minutes until translucent. Add the garlic and continue cooking until fragrant. Now, add half the spinach, ground paprika and cook until almost wilted; continue with the remaining spinach.
- Transfer the spinach with the goat cheese to a blender or food processor and blend until smooth. Season with salt and pepper.
- Reheat the skillet over medium-high heat and add a tortilla. Scoop half of the spinach mixture onto one side of the tortilla. Fold the other side of the tortilla over the spinach and cook each side for about 3 minutes until browned. Repeat with the remaining tortilla. Enjoy!
