Tomato and mozzarella is a combination that just cannot do any wrong. It is something that pleases a majority of the crowd and it’s simplicity just makes it a great dinner-party dish. Want to take it up a notch? Then I have you covered! This tomato carpaccio is just as simple as the original, but that dressing gives it that much more flavor!
I could eat it this for lunch and dinner everyday!
This recipe serves 2-4.
Ingredients
3 large tomatoes
125g fresh mozzarella, room temperature
For the dressing
2 tablespoons good quality EV olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1 teaspoon honey
Salt, to taste
Extra
Parsley or basil
Salt
Black pepper
Good quality EV olive oil
Crusty bread
Directions:
- Whisk together all the ingredients for the dressing and season with salt. Set aside.
- Wash and dry the tomatoes. Place the tomato on its side; using a sharp knife slice and discard the top. Continue slicing the tomato very thin (they should almost be see through). Repeat these steps with the remaining tomatoes. Place the slices on a large serving plate.
- Pour the dressing over the tomatoes and allow to marinate for 5 minutes. Tear the mozzarella and place on top of the tomatoes. Generously season with black pepper and salt and drizzle some olive oil over the mozzarella. Sprinkle a bit of parsley or basil and serve with crusty bread to dip in that delicious dressing. Enjoy!
