Peanut sauce is the best. I remember eating this as a kid and dipping anything from chicken, vegetables and my potatoes in it.
Now there is an even easier and healthy way to make chicken satay. Blend the sauce, pour it over the chicken and bake in the oven. Serve with green veggies, roasted potatoes or coconut rice and you have the best meal!
This recipe serves 4
Ingredients
840g boneless chicken thighs
Salt
Black pepper
Olive oil
For the peanut sauce
3/4 cup smooth peanut butter
1/3 cup Greek yogurt
1/4 cup chopped parsley
1 lime, juice
1 tablespoon sesame oil
2 tablespoons curry powder
3 tablespoons sweet chili sauce
2 tablespoons honey
2 tablespoons soy sauce
2 tablespoons milk
Directions
- Preheat the oven to 220C and lightly grease an oven-proof dish with a bit of olive oil (the dish needs to be large enough to arrange the chicken in a single layer).
- I find it easier to add the ingredients for the peanut sauce to a blender or food processor and pulse until a nice smooth sauce. Or you can mix everything together using a whisk or fork. Season with salt and pepper to taste and add more milk if the sauce is too thick. You want to be able to pour the mixture.
- Layer the chicken in the oven dish season with a bit of salt and pepper. Pour the sauce making sure all the chicken thighs are fully covered. Bake for 25-30 minutes.
- Serve with some extra lime. Enjoy!
