I was born and raised on St. Maarten, an island in the Caribbean. Not only did I love growing up there but the food is something I definitely miss. Think barbecue but with loads of influence from neighbouring islands. The spice blends are amazing and everything is just so flavorsome.
The chicken for this burger is marinated in various spices and then you can either grill it on the barbecue or bake it in the oven (what I did, due to rainy weather). The taste is amazing and a bit spicy which I love. I think this might be my favorite burger of all time..yup I said it!
This recipe makes 2 burgers
Ingredients
400g boneless chicken thighs (about 4 pieces)
1 small onion, chopped
1 red chilli pepper, chopped (deseeded if you want less spicy)
1 clove garlic, minced
1 lime, juiced
2 tablespoons olive oil
1 tablespoon honey
1 teaspoon dried thyme
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon black pepper

2 burger buns
2 tablespoons mango chutney
Cucumber
Lettuce
Directions
- Add all the ingredients, except the chicken thighs, to a food processor and blend. Pour over the chicken in a medium size bowl, mix until completely dredged. Cover and allow to marinate for at least 1 hour, preferably all day or overnight.
- Preheat the oven to 220C and line an oven tray with parchment paper. Spread the chicken on the prepared tray and bake for 25-30 minutes. The chicken should be cooked and the edges should be a bit burnt.
- In the mean time toast the burger buns.
- Assemble the burgers by adding lettuce and cucumber, top with the chicken and finish with mango chutney. Serve with grilled corn and fries. Enjoy!
